Super Kale Pesto

Ingredients

Pesto

  • 2 to 3 cloves garlic
  • 3 cups packed kale
  • ¾ cup hemp seeds or toasted walnuts or pecans
  • 2 tablespoons lemon juice
  • ¾ teaspoon fine-grain sea salt
  • ¼ teaspoon ground pepper
  • ¼ cup flaxseed oil or extra-virgin olive oil
  • cup grated Parmesan cheese (optional)
  • red pepper flakes optional for kick

Pasta (if desired)

  • 1 pound whole grain pasta
  • 1 cup reserved pasta water

Instructions

  1. Prepare the pesto by processing garlic in a food processor until minced.
  2. Add kale, hemp seeds, lemon juice, salt, and pepper, then drizzle in oil while processing until desired consistency is reached.
  3. Taste and adjust seasoning as needed.
  4. If making pasta, boil salted water and cook pasta until al dente, reserving one cup of cooking water before draining.
  5. Mix pasta with pesto, adding reserved water to adjust consistency if needed.
