Ingredients

The beans

  • 1 pound bag dried pinto beans
  • 5-6 cups chicken broth

The meat

  • 1-1½ pounds smoked turkey leg or wing

The vegetables and seasonings

  • 1 teaspoon olive oil
  • 1 cup chopped white onion
  • 3 cloves garlic, minced
  • 1 teaspoon Creole seasoning
  • 1 piece bay leaf

Instructions

  1. Soak the beans in boiling water for 1 hour, then drain, or soak them overnight.
  2. Add all ingredients to the slow cooker.
  3. Cook on High for 4-6 hours or Low for 7-10 hours until the beans are tender.
  4. Remove the bay leaf and smoked turkey, shred the turkey if desired, and return it to the pot.
  5. Taste and adjust seasoning with salt and pepper before serving.
