Slow Cooker Pinto Beans and Ham

Ingredients

  • 1 piece Meaty Ham Bone
  • 2 ½ cups Pinto Beans (dry or soaked overnight)
  • 8 cups Water (6 cups for soaked beans)
  • 1 large Bay Leaf
  • 5 cloves Garlic, minced (or to taste)
  • 1 large Onion, diced
  • ½ teaspoon Thyme Leaves, dried
  • 2 sprigs Fresh Rosemary
  • ½ teaspoon Pepper
  • 1 teaspoon Kosher Salt

Instructions

  1. Rinse the meaty ham bone.
  2. Add all ingredients except for the salt to the slow cooker and stir.
  3. Cook on High for 7-8 hours (or Low for soaked beans). Stir halfway through and add water if needed.
  4. Remove the ham bone and bay leaf and discard them.
  5. Taste and add salt if necessary.
  6. Serve with bread if desired.
