Slow Cooker Ham and Bean Soup

Ingredients

Vegetables

  • 1 medium yellow onion
  • 3 stalks celery
  • 4 medium carrots
  • 4 cloves garlic

Meat

  • 2 medium smoked ham hocks

Beans

  • 1 lb. dry 16 bean mix

Herbs and Spices

  • 2 whole bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Tbsp chicken base or bouillon
  • to taste salt and pepper

Liquid

  • 6 cups water

Instructions

  1. Soak the beans overnight in a large container with twice the amount of water.
  2. Dice the onion, carrots, and celery, and mince the garlic. Place them in the slow cooker.
  3. Add the ham hocks to the vegetables in the slow cooker.
  4. Drain and rinse the soaked beans, then add them to the slow cooker.
  5. Add bay leaves, thyme, oregano, chicken base, and pepper to the slow cooker.
  6. Pour in 6 cups of water and stir gently to combine without disturbing the vegetables.
  7. Secure the lid and cook on high for 4-6 hours until the beans are soft.
  8. Stir the soup and remove the ham hocks. Shred the meat and return it to the soup.
  9. Adjust seasoning as desired and serve hot with garnishes.
