Slow Cooker Ham and Bean Soup

Instructions
- Soak the beans overnight in a large container with twice the amount of water.
- Dice the onion, carrots, and celery, and mince the garlic. Place them in the slow cooker.
- Add the ham hocks to the vegetables in the slow cooker.
- Drain and rinse the soaked beans, then add them to the slow cooker.
- Add bay leaves, thyme, oregano, chicken base, and pepper to the slow cooker.
- Pour in 6 cups of water and stir gently to combine without disturbing the vegetables.
- Secure the lid and cook on high for 4-6 hours until the beans are soft.
- Stir the soup and remove the ham hocks. Shred the meat and return it to the soup.
- Adjust seasoning as desired and serve hot with garnishes.
