Slow Cooker Ham and Bean Soup

Instructions
- Heat olive oil in a saucepan over medium-high heat and sauté carrots, celery, and onion until softened.
- Stir in chicken broth, water, beans, ham bone, garlic powder, cumin, paprika, thyme, and bay leaf, then bring to a boil.
- Pour the mixture into a slow cooker and cook on HIGH for 4 to 6 hours or until beans are tender.
- Remove the ham bone and bay leaf, chop the ham from the bone, and return it to the slow cooker.
- Add any additional ham if desired, cover, and heat through for about 5 minutes.
- Season to taste with salt and pepper.
