Slow Cooker Ham and Bean Soup

Ingredients

The soup base

  • 1 tablespoon olive oil
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 4 cups water
  • 1 pound dried navy beans or pinto beans
  • 1 meaty ham bone or ham hocks

Spices

  • 2 teaspoons garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • to taste salt and freshly ground black pepper

Optional

  • as needed additional cooked ham, chopped

Instructions

  1. Heat olive oil in a saucepan over medium-high heat and sauté carrots, celery, and onion until softened.
  2. Stir in chicken broth, water, beans, ham bone, garlic powder, cumin, paprika, thyme, and bay leaf, then bring to a boil.
  3. Pour the mixture into a slow cooker and cook on HIGH for 4 to 6 hours or until beans are tender.
  4. Remove the ham bone and bay leaf, chop the ham from the bone, and return it to the slow cooker.
  5. Add any additional ham if desired, cover, and heat through for about 5 minutes.
  6. Season to taste with salt and pepper.
