Ingredients

The marinade

  • 3 Tbsp. sugar
  • ¼ cup apple cider vinegar or red wine vinegar
  • 1 Tbsp. kosher salt
  • tsp. kosher salt
  • 1 Tbsp. onion powder
  • 2 tsp. garlic powder
  • 2 tsp. paprika
  • 3 Tbsp. extra-virgin olive oil

The main ingredients

  • lb. skinless, boneless chicken thighs
  • 1 cup Israeli couscous
  • 2 medium ears of corn
  • 12 oz. cherry tomatoes
  • 1 lemon for zest and wedges
  • Basil leaves for serving

For cooking

  • Vegetable oil for grill

Instructions

  1. Whisk together sugar, vinegar, and salt in a bowl until dissolved, then mix in onion powder, garlic powder, paprika, and olive oil.
  2. Pour the marinade into a resealable bag, add chicken thighs, seal, and coat. Let marinate for 15 minutes or up to 12 hours in the fridge.
  3. Heat olive oil in a saucepan, add couscous, and cook until golden. Add water and salt, bring to a boil, then simmer until tender.
  4. Prepare the grill and oil the grate. Grill corn until charred, then cut kernels off and place in a bowl.
  5. Remove chicken from the marinade and grill until cooked through, about 5 minutes per side. Let rest for 10 minutes.
  6. Combine corn, cherry tomatoes, and couscous in a bowl. Drizzle with remaining vinegar and olive oil, season, and toss.
  7. Slice chicken and serve over the salad, topped with basil leaves and lemon wedges.
