Instructions
- Whisk together sugar, vinegar, and salt in a bowl until dissolved, then mix in onion powder, garlic powder, paprika, and olive oil.
- Pour the marinade into a resealable bag, add chicken thighs, seal, and coat. Let marinate for 15 minutes or up to 12 hours in the fridge.
- Heat olive oil in a saucepan, add couscous, and cook until golden. Add water and salt, bring to a boil, then simmer until tender.
- Prepare the grill and oil the grate. Grill corn until charred, then cut kernels off and place in a bowl.
- Remove chicken from the marinade and grill until cooked through, about 5 minutes per side. Let rest for 10 minutes.
- Combine corn, cherry tomatoes, and couscous in a bowl. Drizzle with remaining vinegar and olive oil, season, and toss.
- Slice chicken and serve over the salad, topped with basil leaves and lemon wedges.
