Easy One Pan Salmon Dinner

Ingredients

Main Ingredients

  • 4 filets salmon
  • 2 lbs baby potatoes, quartered
  • 1 bunch asparagus, trimmed

Sauce and Seasoning

  • 5 tbsp olive oil
  • 2 tbsp grainy mustard
  • 2 tbsp maple syrup
  • 1 clove garlic, minced
  • 2 tsp salt
  • 1 tsp pepper
  • ½ tsp paprika

Instructions

  1. 1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. 2. Microwave the baby potatoes for 2 minutes to pre-soften, then cut them into quarters.
  3. 3. Place the asparagus on the baking sheet and drizzle with 2 tbsp of olive oil, ½ tsp of salt, and ¼ tsp of pepper. Toss to coat.
  4. 4. Add the potatoes to the baking sheet, drizzle with 2 tbsp of olive oil, ½ tsp of salt, and ¼ tsp of pepper. Toss to coat.
  5. 5. Bake the vegetables in the oven for 20 minutes.
  6. 6. While the vegetables are baking, prepare the salmon sauce by whisking together 1 tbsp of olive oil, grainy mustard, maple syrup, minced garlic, 1 tsp of salt, ½ tsp of pepper, and paprika.
  7. 7. After 20 minutes, place the salmon skin side down on the baking sheet and brush the fillets with half of the sauce. Spoon the remaining sauce over the potatoes and asparagus, tossing to blend.
  8. 8. Bake for an additional 12-14 minutes or until the salmon is fully cooked.
  9. 9. Serve immediately.
