Ingredients

Main Ingredients

  • 2-3 fillet Salmon Steaks
  • 1 pound green beans
  • 1 cup cherry tomatoes

Seasoning

  • 1-2 teaspoons minced garlic
  • 2-3 tablespoons fresh herbs (thyme, parsley, basil)
  • 1 tablespoon Cajun/Creole seasoning
  • ¼ cup canola oil
  • to taste salt and pepper

Instructions

  1. 1. Clean and cut the baby potatoes in half, boil in salted water until fork tender, then drain and set aside.
  2. 2. In a small bowl, combine garlic, thyme, parsley, Cajun seasoning, and canola oil; mix thoroughly.
  3. 3. Season the salmon steaks with salt and pepper, then brush with the spice mixture.
  4. 4. Coat the green beans and cherry tomatoes with the same Cajun spice mixture.
  5. 5. Preheat the oven to 400ºF and line a baking sheet with foil or parchment.
  6. 6. Place the seasoned salmon, tomatoes, potatoes, and green beans on the lined baking sheet.
  7. 7. Bake for 15-18 minutes or until the salmon is cooked through.
