Ingredients

The main ingredients

  • 1 pound asparagus
  • 3 tablespoons extra virgin olive oil
  • 20 ounces salmon filets
  • 4 pieces shallots
  • 1 piece lemon
  • 1 cup cherry tomatoes

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Place the trimmed asparagus in a single layer on the baking sheet and season with salt, pepper, and 1 tablespoon of olive oil.
  3. Place the salmon on top of the asparagus.
  4. Scatter the sliced shallots, lemon slices, and cherry tomatoes on top.
  5. Drizzle with the remaining 2 tablespoons of olive oil and season again with salt and pepper.
  6. Cook for 8 to 15 minutes, until the salmon reaches the desired doneness and the asparagus is crisp-tender.
