Ingredients

The main ingredients

  • 1 lb sockeye salmon
  • 1 lb asparagus, trimmed
  • 1 lb cherry tomatoes
  • 1 small lemon, sliced in ¼ inch rings
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder

The sauce

  • ¼ cup avocado mayo
  • 1 tsp dill
  • 1 Tbsp lemon juice
  • ½ tsp golden balsamic (optional)

Instructions

  1. 1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. 2. Prepare the lemon dill sauce by whisking all sauce ingredients in a small bowl.
  3. 3. Place the sockeye salmon in the middle of the baking sheet and brush generously with the sauce, reserving some for serving.
  4. 4. Arrange the asparagus and cherry tomatoes around the salmon and sprinkle with salt, pepper, and garlic powder.
  5. 5. Bake for about 15 minutes until the tomatoes burst, asparagus is tender, and the salmon flakes easily.
  6. 6. Serve and top each salmon piece with a spoonful of the lemon dill sauce.
