Lemon Pepper Salmon with Garlic Parmesan Asparagus

Ingredients

The salmon

  • 1 ½ lbs salmon, skin on
  • 2 ½ Tbsp olive oil, divided
  • 1 tsp lemon zest
  • 1 Tbsp fresh lemon juice
  • 4 cloves garlic, minced, divided
  • 1 tsp dijon mustard
  • ¾ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ lemon thinly sliced (optional)

The asparagus

  • 1 ½ - 2 lbs asparagus, tough ends trimmed
  • ½ cup finely shredded parmesan

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Place the salmon in the center of the pan.
  3. In a bowl, whisk together 1 ½ Tbsp olive oil, lemon zest, lemon juice, 2 cloves of garlic, dijon mustard, and onion powder.
  4. Brush the mixture over the salmon and sprinkle with salt and pepper, adding lemon slices on top.
  5. Toss the asparagus with the remaining 1 Tbsp olive oil, 2 cloves of garlic, and season with salt, then arrange around the salmon.
  6. Bake for 10 minutes, then toss the asparagus and sprinkle with parmesan before returning to the oven for an additional 5-10 minutes until the salmon is cooked through.
  7. Cut the salmon into portions and serve warm.
