Citrus Baked Salmon in Foil with Asparagus

Ingredients

The salmon and asparagus

  • 1 lb asparagus
  • 4 oz salmon fillets
  • 8 slices lemon
  • to taste salt
  • to taste pepper

Lemon Garlic Butter Sauce

  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon unsalted butter, melted
  • 2 tablespoons raw honey
  • 1 teaspoon lemon zest
  • ¼ teaspoon smoked paprika
  • 1 teaspoon fresh thyme leaves
  • teaspoon red pepper flakes
  • teaspoon black pepper
  • to taste salt

Instructions

  1. Preheat the oven to 400°F.
  2. Create a pocket with 4 sheets of tin foil and place them on a baking sheet.
  3. Evenly distribute asparagus among the packets and season with salt and pepper.
  4. Place salmon on top of the asparagus.
  5. In a small bowl, combine garlic, mustard, butter, honey, lemon zest, smoked paprika, thyme, red pepper flakes, black pepper, and salt.
  6. Pour the mixture over each salmon and rub it in gently.
  7. Place two slices of lemon on each salmon piece.
  8. Close the foil packets.
  9. Bake for 20 minutes, then turn on the broiler.
  10. Open the packets to expose the salmon and broil uncovered for 1 minute.
