Baked Salmon in Foil with Asparagus

Ingredients

The salmon and asparagus

  • 4 pieces skinless salmon fillets
  • 1 lb asparagus

The seasoning

  • Tbsp olive oil
  • 2 cloves garlic
  • to taste salt
  • to taste black pepper
  • 1 slice lemon
  • to taste fresh dill

Instructions

  1. Preheat the oven to 400°F.
  2. Cut four sheets of aluminum foil about 14 inches long.
  3. Divide the asparagus into 4 equal portions and layer them in the center of each foil sheet.
  4. In a small bowl, mix the olive oil and minced garlic, then drizzle 1 tsp over the asparagus and season with salt and pepper.
  5. Season the bottom of each salmon fillet with salt and pepper, then place them on top of the asparagus.
  6. Drizzle 1 tsp of the olive oil mixture over each salmon fillet and season the top with salt and pepper.
  7. Top each fillet with 2 sprigs of dill and 2 lemon slices.
  8. Wrap the foil around the salmon and asparagus to enclose them.
  9. Place the foil pouches on a baking sheet and bake for about 20-30 minutes until the salmon is cooked through.
  10. Unwrap and serve warm.
