Ingredients

The main ingredients

  • 4 fillets salmon
  • ½ pound asparagus spears
  • 4 ears fresh corn kernels
  • 1 piece red bell pepper

The herb butter

  • 4 tablespoons butter
  • 1 teaspoon minced garlic
  • 2 teaspoons minced fresh thyme
  • 2 teaspoons minced fresh parsley
  • 1 teaspoon lemon zest
  • to taste salt and pepper

For serving

  • to taste lemon wedges
  • to taste chopped parsley

Miscellaneous

  • as needed cooking spray

Instructions

  1. Preheat a grill to medium heat or an oven to 400°F.
  2. Coat 4 large squares of foil with cooking spray.
  3. Arrange the salmon, asparagus, corn, and bell peppers in the center of the foil squares.
  4. In a small bowl, mix together the butter, garlic, thyme, parsley, lemon zest, salt, and pepper.
  5. Season the salmon fillets with salt and pepper to taste, then drop spoonfuls of the butter mixture over the salmon and vegetables.
  6. Fold over the foil to seal the packets.
  7. Bake or grill for 15-20 minutes until the salmon is cooked through and vegetables are tender.
  8. Sprinkle with parsley and serve with lemon wedges.
