Ingredients

The salmon

  • lb salmon, sliced into 2 fillets
  • 2 tablespoons butter, softened
  • 2 tablespoons fresh chopped cilantro or parsley
  • 1 teaspoon minced garlic
  • to taste salt and pepper
  • 1 tablespoon lime juice

Pineapple Salsa

  • 1 small pineapple, cored and cut into strips (~2 cups chopped)
  • ½ tablespoon chili powder
  • ½ cup red onion, minced
  • ¼ cup fresh minced cilantro
  • 1 cup cherry tomatoes, quartered
  • 1 tablespoon fresh minced jalapeño
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons lime juice
  • teaspoon salt

Instructions

  1. Preheat the grill to 400ºF and prepare a large piece of tin foil with non-stick cooking spray.
  2. Pat the salmon filets dry with paper towels and season with salt and pepper.
  3. Mix softened butter, cilantro, garlic, salt, and pepper in a small bowl.
  4. Spread the butter mixture on top of the salmon filets and squeeze lime juice over them.
  5. Create a foil pack by folding the top half of the tin foil over the salmon and sealing the edges tightly.
  6. Grill the salmon in the foil pack for 8-10 minutes, checking for doneness.
  7. Let the salmon rest for 5 minutes after removing it from the grill.
  8. For the pineapple salsa, mix onion, cilantro, cherry tomatoes, jalapeño, apple cider vinegar, and lime juice in a bowl and refrigerate.
  9. Grill the pineapple strips seasoned with chili powder and salt for 12-15 minutes, then chop and mix with the salsa ingredients.
