Grilled Salmon in Foil

Pineapple Salsa

pineapple, cored and cut into strips (~2 cups chopped)

Instructions
- Preheat the grill to 400ºF and prepare a large piece of tin foil with non-stick cooking spray.
- Pat the salmon filets dry with paper towels and season with salt and pepper.
- Mix softened butter, cilantro, garlic, salt, and pepper in a small bowl.
- Spread the butter mixture on top of the salmon filets and squeeze lime juice over them.
- Create a foil pack by folding the top half of the tin foil over the salmon and sealing the edges tightly.
- Grill the salmon in the foil pack for 8-10 minutes, checking for doneness.
- Let the salmon rest for 5 minutes after removing it from the grill.
- For the pineapple salsa, mix onion, cilantro, cherry tomatoes, jalapeño, apple cider vinegar, and lime juice in a bowl and refrigerate.
- Grill the pineapple strips seasoned with chili powder and salt for 12-15 minutes, then chop and mix with the salsa ingredients.
