Marinated Grilled Salmon

Ingredients

The salmon

  • 4 pieces salmon fillets, skinless and boneless

The marinade

  • ¼ cup brown sugar
  • ¼ cup olive oil
  • ¼ cup lite soy sauce
  • ¼ cup lime juice
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 cloves garlic, finely minced
  • to taste parsley, finely chopped for garnish
  • to taste lime wheels for garnish

Instructions

  1. Mix all marinade ingredients in a small bowl.
  2. Place salmon fillets in a baking dish or ziplock bag and add the marinade.
  3. Refrigerate for 1-2 hours, turning the salmon halfway through if using a bag.
  4. Preheat the grill to medium-high (350º-400ºF) and clean it thoroughly.
  5. Lightly oil the grill with a paper towel.
  6. Place salmon fillets on the grill, skin side up, and grill for about 5 minutes on each side or until desired doneness.
  7. Serve optionally on a bed of wilted spinach.
