Ingredients

The salmon and marinade

  • 1½-2 pounds salmon fillets (or salmon steaks)
  • ¼ cup vegetable oil
  • cup soy sauce
  • ¼ cup water
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2-3 tablespoons brown sugar
  • ½ teaspoon hot sauce
  • 1 teaspoon white pepper

The dry rub

  • 2-3 tablespoons Creole seasoning

Instructions

  1. Whisk together the vegetable oil, soy sauce, water, garlic powder, onion powder, brown sugar, hot sauce, and white pepper in a bowl until combined.
  2. Marinate the salmon in the mixture, cover, and refrigerate for at least 30 minutes.
  3. Remove the salmon from the marinade, drain it, and discard the marinade.
  4. Brush the salmon lightly with oil and season with salt, pepper, and Creole seasoning.
  5. Preheat the grill to high for 3-5 minutes, then reduce to medium-high heat.
  6. Oil the grill grates using a paper towel dipped in oil.
  7. Place the salmon skin-side up on the grill and cook for about 4-6 minutes per side.
  8. Check for doneness with an instant-read thermometer, which should read 145℉/63℃.
  9. Remove the salmon from the grill using a wide spatula.
