Ingredients

The salmon

  • 3 lb. side of salmon, skin on

The marinade

  • 3 Tbsp soy sauce
  • 2 Tbsp dijon mustard
  • tsp minced garlic
  • cup olive oil
  • 1 Tbsp minced parsley (optional)

Instructions

  1. Cut the salmon into 6 equal portions and place in a baking dish skin side down.
  2. In a bowl, whisk together soy sauce, mustard, garlic, and olive oil until emulsified.
  3. Set aside 2 Tbsp of the marinade and spread the rest over the salmon, letting it rest for 10 minutes.
  4. Preheat the grill to medium-high heat (about 400°F) and brush the grates with oil.
  5. Place the salmon on the grill skin side down and cook for about 4 minutes.
  6. Carefully flip the salmon and cook for another 4 minutes or until desired doneness.
  7. Remove the skin from the salmon, plate it, and brush with the reserved marinade.
  8. Serve warm, garnished with parsley if desired.
