Ingredients

The salmon

  • 6-8 ounce skin-on salmon fillets

The seasoning

  • 2 tablespoons grape seed oil
  • 2 teaspoons kosher salt
  • 2 teaspoons freshly ground black pepper

The garnish

  • 1 lemon cut into wedges

Instructions

  1. Prepare the grill for direct cooking over high heat, around 450°F-550°F.
  2. Brush the cooking grates clean and close the lid to heat.
  3. Coat the flesh side of the salmon fillets with oil and season with salt and pepper.
  4. Grill the salmon skin side down with the lid closed for about 6-8 minutes until it lightens in color and firms up.
  5. Turn the salmon over, close the lid, and cook for an additional 2-4 minutes until it reaches 130°F for medium rare.
  6. Transfer the salmon to a platter to rest for 1-2 minutes.
  7. Serve with the skin removed and lemon wedges.
