Instructions
- Prepare the grill for direct cooking over high heat, around 450°F-550°F.
- Brush the cooking grates clean and close the lid to heat.
- Coat the flesh side of the salmon fillets with oil and season with salt and pepper.
- Grill the salmon skin side down with the lid closed for about 6-8 minutes until it lightens in color and firms up.
- Turn the salmon over, close the lid, and cook for an additional 2-4 minutes until it reaches 130°F for medium rare.
- Transfer the salmon to a platter to rest for 1-2 minutes.
- Serve with the skin removed and lemon wedges.
