Grilled Salmon

wild salmon fillet, skin on, pin bones removed

extra-virgin olive oil plus more for brushing and drizzling

Instructions
- 1. Build a medium-hot fire on one side of a charcoal grill, or preheat a gas grill.
- 2. Brush a rimless baking sheet with extra-virgin olive oil.
- 3. Pat the salmon dry and place it skin-side down on the baking sheet. Rub the flesh side with olive oil and season with salt and pepper.
- 4. Brush the grill rack with vegetable oil and place the salmon on the grill over indirect heat. Cover and cook until the skin is charred and the flesh is opaque, about 20 minutes.
- 5. Check for doneness using a knife or thermometer.
- 6. Transfer the salmon to a platter, drizzle with olive oil, and season with salt and pepper. Serve with halved lemons.
