Marinated Salmon

Ingredients

The salmon

  • 4 fillets salmon

The marinade

  • 4 tablespoons olive oil
  • 1 ½ tablespoons honey
  • 1 ½ tablespoons soy sauce
  • 1 teaspoon lemon zest
  • 2 teaspoons chopped fresh parsley
  • 2 teaspoons fresh thyme leaves
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon minced garlic
  • as needed lemon wedges for serving

Instructions

  1. Combine olive oil, honey, soy sauce, lemon zest, parsley, thyme, salt, and pepper in a bowl and whisk together.
  2. Reserve 1 tablespoon of the marinade for later use and add garlic to the bowl.
  3. Place the salmon in a resealable bag with the marinade, seal, and shake to coat.
  4. Marinate in the refrigerator for at least 30 minutes or up to 6 hours.
  5. Remove salmon from the marinade and scrape off excess herbs and garlic.
  6. For grilling, preheat the grill to medium-high and cook salmon for 5-6 minutes per side until opaque.
  7. For baking, preheat the oven to 425°F, place salmon on a lined sheet pan, and bake for 15 minutes.
  8. Brush reserved marinade over the salmon before serving with lemon wedges.
