Ingredients

The salmon

  • 4 filets salmon
  • 3 tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

The tomato mix

  • 1 pint cherry tomatoes
  • 1 cup pitted kalamata olives
  • 1 cup artichoke hearts
  • 4 cloves garlic
  • 1 whole lemon
  • 2 tbsp olive oil
  • 1 tbsp oregano
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup crumbled feta
  • 3 tbsp fresh dill

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Prepare 4 pieces of foil about 12 inches by 12 inches.
  3. Place each salmon filet on individual foils, skin side down if applicable, and season with olive oil, salt, and pepper.
  4. In a large bowl, combine sliced tomatoes, olives, artichoke hearts, and minced garlic. Add lemon juice, olive oil, oregano, salt, and pepper, and mix well.
  5. Divide the tomato mixture among the foil packets, placing it on top of the salmon.
  6. Wrap the foil packets securely, ensuring they are mostly covered.
  7. Bake for 18-20 minutes or until the salmon flakes easily with a fork.
  8. Unwrap the packets and top with crumbled feta and dill before serving.
