Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Prepare 4 pieces of foil about 12 inches by 12 inches.
- Place each salmon filet on individual foils, skin side down if applicable, and season with olive oil, salt, and pepper.
- In a large bowl, combine sliced tomatoes, olives, artichoke hearts, and minced garlic. Add lemon juice, olive oil, oregano, salt, and pepper, and mix well.
- Divide the tomato mixture among the foil packets, placing it on top of the salmon.
- Wrap the foil packets securely, ensuring they are mostly covered.
- Bake for 18-20 minutes or until the salmon flakes easily with a fork.
- Unwrap the packets and top with crumbled feta and dill before serving.
