Mediterranean Style Salmon

Ingredients

The salmon

  • 2 filets salmon (Sockeye, Coho or Atlantic)

The tapenade

  • ½ cup mixed olives
  • ½ cup diced tomato
  • cup feta crumbles
  • 1 tablespoon finely chopped Italian parsley
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon balsamic vinegar
  • to taste sea salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 350 degrees.
  2. Rinse the salmon under cold running water.
  3. Remove the skin from the salmon if still attached.
  4. Sprinkle the top of the salmon with sea salt and black pepper.
  5. Place the salmon in a baking dish with a little water to keep it from drying out.
  6. Bake the salmon in the oven for 15 minutes.
  7. While the salmon is baking, prepare the tapenade by chopping the mixed olives and tomatoes.
  8. Finely chop the Italian parsley and mix it with the olives, tomatoes, feta, olive oil, and balsamic vinegar.
  9. Season the tapenade with sea salt and black pepper to taste.
  10. Remove the salmon from the oven and top it with the cold feta-olive tapenade before serving.
