Sicilian Style Salmon with Garlic Broccoli and Tomatoes

Ingredients

The salmon

  • 4 pieces salmon fillets
  • 1 splash white wine

The vegetables

  • 1 large head broccoli, cut into florets
  • 1 cup cherry tomatoes
  • 2 cloves garlic, minced or grated
  • ½ cup pitted kalamata olives

The seasoning and oil

  • 1 tablespoon extra virgin olive oil, for rubbing
  • 1 teaspoon red pepper flakes
  • 1 teaspoon paprika
  • to taste kosher salt and pepper
  • 2 tablespoons chopped fresh oregano
  • 1 juice from 1 lemon
  • 1 zest from 1 lemon

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Rub salmon with olive oil and lemon juice, then season with chili flakes, paprika, salt, and pepper. Sear flesh side down for 2-3 minutes until crisp, then flip and cook for 1 more minute.
  3. Remove salmon from skillet and add more oil. Cook broccoli until tender, about 5 minutes, then add tomatoes, garlic, oregano, lemon zest, salt, and pepper. Cook until tomatoes burst, about 5 minutes.
  4. Remove from heat, add a splash of wine, and stir in olives. Return salmon to skillet to warm through.
  5. Serve salmon with the vegetables and sauce, garnished with fresh oregano.
