Parmesan Crusted Salmon & Broccoli

Ingredients

The vegetables

  • 1 1/4 lbs broccoli crowns
  • 2 1/2 Tbsp olive oil
  • 1 clove garlic
  • to taste salt
  • to taste black pepper

The salmon

  • 4 (6 oz) skinless salmon fillets
  • 1 1/2 Tbsp mayonnaise
  • 1 1/2 tsp lemon juice
  • 1 clove garlic
  • 1/4 cup finely grated parmesan
  • 1/4 cup bread crumbs
  • 1 Tbsp chopped fresh parsley
  • 1 1/2 tsp lemon zest
  • 1/4 tsp dried thyme
  • 1 1/2 Tbsp olive oil

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with foil.
  2. Place the broccoli in the center of the baking sheet and drizzle with olive oil and minced garlic, then season with salt and pepper.
  3. Spread the broccoli to the edges of the baking sheet, leaving space in the center for the salmon.
  4. Season the salmon fillets with salt and pepper and place them in the center of the baking sheet.
  5. In a bowl, whisk together mayonnaise, lemon juice, and minced garlic, then brush over the salmon.
  6. In another bowl, mix together bread crumbs, parmesan, parsley, lemon zest, thyme, and olive oil, then sprinkle over the salmon.
  7. Bake for 12 to 15 minutes until the salmon is cooked through and the broccoli is crisp-tender.
