Baked Parmesan Crusted Salmon

Ingredients

The salmon

  • 4 pieces skinless salmon fillets (6-7 oz each)
  • 1 large egg
  • 4 slices lemon

The coating

  • ¾ cup panko bread crumbs
  • ¾ cup finely shredded parmesan
  • Tbsp chopped fresh parsley
  • ¾ tsp garlic powder
  • 1 Tbsp olive oil
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with a wire rack.
  2. In a shallow dish, combine panko, parmesan, parsley, garlic powder, salt, and pepper.
  3. Drizzle olive oil into the mixture and toss to coat.
  4. In another dish, beat the egg until well blended.
  5. Dredge each salmon fillet in the egg, then coat with the panko mixture, pressing to adhere.
  6. Place the coated salmon on the prepared wire rack.
  7. Bake for 10 to 15 minutes, depending on the thickness of the salmon.
  8. Serve with lemon slices for spritzing over the salmon.
