Instructions
- Prepare the homemade pesto if using; blend basil, pepitas, garlic, and salt, then slowly add olive oil, lemon juice, and Parmesan.
- Pat the salmon filets dry and place them on a baking sheet; drizzle with olive oil and sprinkle with salt.
- Let the salmon rest at room temperature for about 10 minutes.
- Preheat the oven broiler to low and broil the salmon for 3-4 minutes until opaque.
- Remove salmon, top with pesto and Parmesan cheese, and broil on high for 1-2 minutes until cheese is bubbly.
- Serve hot, optionally with lemon wedges.
