Ingredients

Baked Pesto Salmon

  • 2 filets fresh Salmon
  • 1 tbsp Olive Oil
  • pinch Salt
  • ¼ cup Basil Pesto
  • ¼ cup grated Parmesan Cheese
  • 4 wedges Lemon (optional)

Homemade Pesto

  • 1 cup Fresh Basil Leaves
  • 2 tbsp Toasted Pepitas
  • 1 clove Garlic
  • ¼ cup Extra Virgin Olive Oil
  • ½ tsp Fresh Lemon Juice
  • ¼ tsp Sea Salt
  • ¼ cup Finely Grated Parmesan Cheese

Instructions

  1. Prepare the homemade pesto if using; blend basil, pepitas, garlic, and salt, then slowly add olive oil, lemon juice, and Parmesan.
  2. Pat the salmon filets dry and place them on a baking sheet; drizzle with olive oil and sprinkle with salt.
  3. Let the salmon rest at room temperature for about 10 minutes.
  4. Preheat the oven broiler to low and broil the salmon for 3-4 minutes until opaque.
  5. Remove salmon, top with pesto and Parmesan cheese, and broil on high for 1-2 minutes until cheese is bubbly.
  6. Serve hot, optionally with lemon wedges.
