Ingredients

The salmon

  • 4 - 6 fillets salmon fillets (6 oz. each)
  • 1 Tbsp olive oil (for brushing salmon and grill)
  • to taste salt
  • to taste black pepper

The creamy pesto sauce

  • 4 oz. cream cheese (diced into small cubes)
  • ¼ cup milk
  • 3 Tbsp pesto (homemade or store-bought)

Instructions

  1. Preheat the grill to medium-high heat (about 425°F).
  2. Brush both sides of the salmon with olive oil and season with salt and pepper.
  3. Brush the grill grates with oil and grill the salmon for about 3 minutes per side or until desired doneness.
  4. While the salmon is grilling, melt the cream cheese with milk in a saucepan over medium heat, stirring constantly until melted.
  5. Remove from heat and stir in the pesto.
  6. Serve the salmon warm with the creamy pesto sauce, adding a teaspoon of pesto on top for extra flavor.
