Pesto Salmon

The vegetables

cherry or grape tomatoes

Instructions
- Preheat the oven to 400°F and coat a large baking sheet with nonstick spray.
- In a bowl, toss the cherry tomatoes and sliced red onion with 2 tablespoons of pesto, ¼ teaspoon of salt, and ¼ teaspoon of pepper, then spread on the baking sheet.
- Bake the vegetables for 10 minutes, stir, and bake for another 10 minutes.
- Pat the salmon fillets dry, season with ½ teaspoon of salt and ¼ teaspoon of pepper, and spread 1 tablespoon of pesto on each fillet.
- Move the vegetables to the sides of the baking sheet and place the salmon in the center.
- Bake the salmon for 16 to 20 minutes until it flakes easily and reaches an internal temperature of 145°F.
- Sprinkle with additional salt, squeeze lemon juice over the top, and garnish with fresh basil before serving.
