Pesto Salmon

Ingredients

The salmon and seasoning

  • 4 pieces 6-ounce salmon fillets
  • ¾ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 6 tablespoons prepared basil pesto

The vegetables

  • 2 pints cherry or grape tomatoes
  • 1 small red onion

For serving

  • 1 squeeze fresh lemon juice
  • to taste chopped fresh basil

Instructions

  1. Preheat the oven to 400°F and coat a large baking sheet with nonstick spray.
  2. In a bowl, toss the cherry tomatoes and sliced red onion with 2 tablespoons of pesto, ¼ teaspoon of salt, and ¼ teaspoon of pepper, then spread on the baking sheet.
  3. Bake the vegetables for 10 minutes, stir, and bake for another 10 minutes.
  4. Pat the salmon fillets dry, season with ½ teaspoon of salt and ¼ teaspoon of pepper, and spread 1 tablespoon of pesto on each fillet.
  5. Move the vegetables to the sides of the baking sheet and place the salmon in the center.
  6. Bake the salmon for 16 to 20 minutes until it flakes easily and reaches an internal temperature of 145°F.
  7. Sprinkle with additional salt, squeeze lemon juice over the top, and garnish with fresh basil before serving.
