Tuscan Salmon

Ingredients

  • 1 lb salmon fillets, cut into 3 pieces
  • 2 cloves garlic, peeled and minced
  • ½ cup white wine
  • ½ cup heavy whipping cream
  • ½ cup sun-dried tomatoes in oil, cut into pieces
  • ¼ teaspoon salt or to taste
  • 3 dashes cayenne pepper
  • 1 cup baby spinach
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley or Italian basil
  • 2 tablespoons unsalted butter
  • to taste salt and black pepper

Instructions

  1. Pat the salmon dry and season with salt and black pepper.
  2. Heat a skillet over high heat and melt the butter.
  3. Pan-sear the salmon fillets, starting with the skin side down, then flip and brown the surface.
  4. Remove the salmon from the skillet and set aside.
  5. Reduce the heat and sauté the garlic until fragrant.
  6. Add the white wine, heavy cream, and sun-dried tomatoes, then simmer.
  7. Return the salmon to the skillet and season the sauce with salt and cayenne pepper.
  8. Add the spinach and lemon juice, cooking until the spinach wilts and the salmon is cooked through.
  9. Garnish with chopped parsley or Italian basil and serve immediately.
