Keto Tuscan Salmon

Ingredients

The salmon

  • 2-6 ounce filets Sockeye or Keta salmon

The sauce

  • 2 slices bacon, diced
  • 1 teaspoon bacon grease or olive oil
  • 1 clove garlic, sliced
  • 1 ounce onion, sliced (about ¼ of a medium onion)
  • ¼ cup vodka
  • 1 tablespoon tomato paste
  • cup heavy cream
  • 2 tablespoons water
  • 1 tablespoon vodka
  • 10 leaves basil, chiffonade
  • ½ teaspoon lemon zest, grated
  • to taste salt and pepper

Instructions

  1. Let the salmon come to room temperature for 15 minutes and gather all ingredients.
  2. Dice the bacon and cook it in a medium frying pan over medium heat with bacon grease for about 2 minutes.
  3. While the bacon cooks, slice the onion and garlic, chiffonade the basil, and grate the lemon zest.
  4. Stir the bacon until browned and crisp, then remove it from the pan, leaving the fat.
  5. Pour out excess fat, leaving about 2 tablespoons, and return the pan to medium heat.
  6. Season the salmon lightly and place it in the pan, cooking undisturbed for 3-4 minutes.
  7. Flip the salmon and cook for another 3-4 minutes, then remove and keep warm.
  8. In the same pan, add onions and garlic, stirring until softened, about 1.5 minutes.
  9. Off the heat, slowly add vodka to deglaze the pan, then return to heat and reduce by half.
  10. Add tomato paste, heavy cream, and water, stirring to combine and simmer for a minute.
  11. Stir in bacon, additional vodka, lemon zest, and basil, then season to taste.
  12. Plate the salmon and top with sauce, garnishing with more basil if desired.
