Keto Tuscan Salmon

Instructions
- Let the salmon come to room temperature for 15 minutes and gather all ingredients.
- Dice the bacon and cook it in a medium frying pan over medium heat with bacon grease for about 2 minutes.
- While the bacon cooks, slice the onion and garlic, chiffonade the basil, and grate the lemon zest.
- Stir the bacon until browned and crisp, then remove it from the pan, leaving the fat.
- Pour out excess fat, leaving about 2 tablespoons, and return the pan to medium heat.
- Season the salmon lightly and place it in the pan, cooking undisturbed for 3-4 minutes.
- Flip the salmon and cook for another 3-4 minutes, then remove and keep warm.
- In the same pan, add onions and garlic, stirring until softened, about 1.5 minutes.
- Off the heat, slowly add vodka to deglaze the pan, then return to heat and reduce by half.
- Add tomato paste, heavy cream, and water, stirring to combine and simmer for a minute.
- Stir in bacon, additional vodka, lemon zest, and basil, then season to taste.
- Plate the salmon and top with sauce, garnishing with more basil if desired.
