Keto Tuscan Salmon

onion, sliced (about ¼ of a medium onion)

Instructions
- Let the salmon come to room temperature for 15 minutes and gather all ingredients.
- Dice the bacon and cook it in a medium frying pan over medium heat until crispy, then remove the bacon while leaving the fat in the pan.
- Pour out excess bacon fat, leaving about 2 tablespoons, and return the pan to medium heat.
- Season the salmon lightly with salt and place it in the pan, cooking undisturbed for 3-4 minutes.
- Flip the salmon and cook for another 3-4 minutes until done, then remove and keep warm.
- In the same pan, add onions and garlic, stirring until softened.
- Remove the pan from heat and carefully add vodka, then return to heat and reduce by half.
- Stir in tomato paste, heavy cream, and water, allowing to simmer until slightly thickened.
- Add the bacon, additional vodka, lemon zest, and basil, stirring to combine and season to taste.
- Serve the salmon topped with the sauce and garnish with additional basil if desired.
