Keto Tuscan Salmon

Ingredients

The salmon

  • 2-6 ounce filets Sockeye or Keta salmon

The sauce

  • 2 slices bacon, diced
  • 1 teaspoon bacon grease or olive oil
  • 1 clove garlic, sliced
  • 1 ounce onion, sliced (about ¼ of a medium onion)
  • ¼ cup vodka
  • 1 tablespoon tomato paste
  • cup heavy cream
  • 2 tablespoons water
  • 1 tablespoon vodka
  • 10 leaves basil, chiffonade
  • ½ teaspoon lemon zest, grated
  • to taste salt and pepper

Instructions

  1. Let the salmon come to room temperature for 15 minutes and gather all ingredients.
  2. Dice the bacon and cook it in a medium frying pan over medium heat until crispy, then remove the bacon while leaving the fat in the pan.
  3. Pour out excess bacon fat, leaving about 2 tablespoons, and return the pan to medium heat.
  4. Season the salmon lightly with salt and place it in the pan, cooking undisturbed for 3-4 minutes.
  5. Flip the salmon and cook for another 3-4 minutes until done, then remove and keep warm.
  6. In the same pan, add onions and garlic, stirring until softened.
  7. Remove the pan from heat and carefully add vodka, then return to heat and reduce by half.
  8. Stir in tomato paste, heavy cream, and water, allowing to simmer until slightly thickened.
  9. Add the bacon, additional vodka, lemon zest, and basil, stirring to combine and season to taste.
  10. Serve the salmon topped with the sauce and garnish with additional basil if desired.
