Ingredients

The salmon

  • 4 fillets salmon
  • 2 teaspoons Italian seasoning
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 1 tablespoon butter

The garlic cream sauce

  • 1 tablespoon unsalted butter
  • 1 tablespoon minced garlic
  • cups cherry tomatoes
  • 4 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • ¾-1 cup chicken broth
  • ¾-1 cup heavy cream
  • ½ cup grated parmesan
  • 2-3 tablespoons basil, chopped
  • for serving lemon wedges
  • to taste salt

Instructions

  1. Whisk together Italian seasoning, garlic powder, and paprika. Season salmon with salt and pepper, then sprinkle with the spice mixture.
  2. Heat butter in a skillet over medium-high heat. Cook salmon skin-side up until golden, about 5-6 minutes, then flip and cook for another 2 minutes. Transfer to a plate.
  3. In the same pan, melt another tablespoon of butter. Add minced garlic, cherry tomatoes, spinach, and Italian seasoning. Sauté until garlic is fragrant and spinach is wilted.
  4. Pour in chicken broth to deglaze the pan, scraping up browned bits. Add cream and parmesan, cooking until the sauce thickens slightly.
  5. Return salmon to the skillet and heat through for 2-3 minutes. Serve with sauce over pasta, garnished with lemon wedges and fresh herbs.
