Instructions
- Whisk together Italian seasoning, garlic powder, and paprika in a bowl.
- Season shrimp with salt, pepper, and the spice mixture.
- Heat oil in a skillet over medium-high heat and cook shrimp for about 2 minutes on each side, then transfer to a plate.
- In the same pan, melt butter and sauté garlic and Italian seasoning until fragrant.
- Add chicken broth and scrape any browned bits from the skillet.
- Stir in heavy cream and Parmesan, cooking until the sauce thickens slightly.
- Season sauce with salt and pepper, then add sun-dried tomatoes and spinach, simmering until spinach wilts.
- Return shrimp to the skillet and heat for 1-2 minutes, adjusting seasonings as needed.
- Serve with lemon wedges.
