Baked Salmon and Asparagus with Herb Sauce

Ingredients

Zesty Garlic & Herb Sauce

  • 1 cup fresh parsley (torn)
  • 2 teaspoons dried dill (or 2 Tablespoons freshly chopped)
  • 2 small garlic cloves
  • 2 teaspoons capers (optional)
  • cup olive oil
  • 2-3 Tablespoons non-dairy milk/cream, regular cream, or Greek yogurt
  • 1 teaspoon honey
  • ¼ teaspoon kosher salt
  • to taste salt and pepper
  • splash lemon juice

For Salmon & Asparagus

  • 18-20 oz Atlantic salmon fillet (skin removed and sliced into 4-6 oz portions or 3-4 fillets)
  • 1 lb asparagus (trimmed)
  • ½ Tablespoon olive oil
  • to taste salt and pepper
  • ¼ cup parmesan cheese (grated, optional)
  • to garnish lemon slices

Instructions

  1. Prepare the garlic and herb sauce by blending all the sauce ingredients until smooth and adjusting salt and pepper to taste.
  2. Preheat the oven to 400°F and prepare a baking sheet by greasing it or lining it with parchment paper.
  3. Arrange the salmon filets in the center of the baking pan and place asparagus around them. Drizzle olive oil over the asparagus and season with salt and pepper.
  4. Brush each salmon filet with the herb sauce and garnish with lemon slices. Drizzle lemon juice over the asparagus.
  5. Bake for 10-14 minutes, depending on the thickness of the salmon.
  6. Remove from oven and optionally sprinkle grated parmesan over the salmon and asparagus.
  7. Broil for 1-3 minutes until the salmon and parmesan are flaky and golden.
  8. Let the salmon rest for 5 minutes before serving, garnished with extra herbs if desired.
