Homemade Healthy Samoa Cookies

The cookie base

desiccated coconut

medjool dates, soaked in warm water for 30 minutes
The coating

dark chocolate

coconut oil
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Toast the coconut for 5 minutes or until slightly golden brown.
- Blend the cashews in a food processor until finely ground.
- Add the toasted coconut and soaked dates to the food processor and blend until well combined.
- Roll the mixture into balls and flatten them on the baking sheet, poking a hole in the center with a straw or chopstick.
- Freeze the cookies for 30 minutes while melting the chocolate and coconut oil in the microwave.
- Dip the bottom of the cookies in the melted chocolate and drizzle more on top if desired.
- Freeze again for 30 minutes before enjoying.
