Kale Grape and Farro Salad

Ingredients

Dressing

  • ¼ cup olive oil
  • 3 Tbsp white wine vinegar
  • 2 Tbsp honey
  • tsp Dijon mustard
  • 1 Tbsp minced shallot
  • to taste salt

Salad

  • ¾ cup dry farro
  • 5 oz baby kale
  • 12 oz red grapes, halved
  • 4 oz feta, crumbled
  • ¾ cup walnuts, chopped and toasted

Instructions

  1. Combine the dressing ingredients in a jar, shake to blend, and chill until ready to serve.
  2. In a salad bowl, add kale, cooked farro, grapes, feta, and walnuts.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Serve immediately.
