Kale, Grape & Walnut Salad

Ingredients

Vinaigrette

  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or agave nectar
  • teaspoon garlic powder
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon extra-virgin olive oil

Salad

  • 6 cups thinly sliced kale leaves
  • 1 cup halved red or black grapes
  • ½ cup walnut halves, lightly toasted
  • ½ cup parsley leaves
  • 1 ounce shaved Parmesan cheese
  • ¼ teaspoon freshly ground black pepper
  • 2 pinches salt

Instructions

  1. Whisk together the vinegar, mustard, honey, and garlic powder to make the vinaigrette.
  2. Drizzle in the olive oil while stirring to combine.
  3. In a large bowl, toss the kale with the vinaigrette and let it rest for 15 minutes.
  4. Add the grapes, walnuts, parsley, Parmesan, pepper, and salt to the kale, tossing well.
  5. Serve immediately or up to a few hours later.
