Healthy Carrot Cake Cookies

Instructions
- Preheat the oven to 325°F and prepare two cookie sheets.
- Grate the carrots using a box grater or food processor.
- In a large bowl, combine oats, protein powder, buckwheat flour, cinnamon, allspice, salt, and baking soda.
- Add applesauce, sticky sweetener, apple cider vinegar, and vanilla extract to the dry ingredients and mix well.
- Fold in the shredded carrots and raisins.
- Measure out ¼ cup of the batter, roll it into a ball, and flatten it on the cookie sheet.
- Bake for 9-10 minutes until the cookies are slightly springy and no longer sticky.
- Let the cookies cool for about 10 minutes before transferring them to a wire rack.
