Healthy Carrot Cake Cookies

Ingredients

  • 2 cups old fashioned rolled oats
  • ½ cup soy protein powder
  • ¼ cup buckwheat flour
  • 2 tsp cinnamon
  • ½ tsp allspice
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 cup unsweetened applesauce
  • ½ cup sticky sweetener (agave and molasses mix)
  • 1 Tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • cups carrots, shredded
  • ½ - ⅔ cup raisins

Instructions

  1. Preheat the oven to 325°F and prepare two cookie sheets.
  2. Grate the carrots using a box grater or food processor.
  3. In a large bowl, combine oats, protein powder, buckwheat flour, cinnamon, allspice, salt, and baking soda.
  4. Add applesauce, sticky sweetener, apple cider vinegar, and vanilla extract to the dry ingredients and mix well.
  5. Fold in the shredded carrots and raisins.
  6. Measure out ¼ cup of the batter, roll it into a ball, and flatten it on the cookie sheet.
  7. Bake for 9-10 minutes until the cookies are slightly springy and no longer sticky.
  8. Let the cookies cool for about 10 minutes before transferring them to a wire rack.
