Ingredients

Dressing

  • 1 tablespoon brown rice miso paste
  • 1 tablespoon brown rice vinegar
  • 1 tablespoon ponzu or soy sauce
  • ½ lime juice
  • 4 tablespoons cow's milk or soy yogurt
  • to taste sea salt

Salad

  • 5 ounces broccoli, chopped
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons sesame seeds
  • 2 handfuls seasonal salad leaves
  • 1 ripe avocado, halved
  • 1 15-ounce can white beans, drained

Instructions

  1. Prepare the dressing by mixing all dressing ingredients in a bowl, adjusting salt to taste.
  2. Blanch the broccoli in boiling salted water for about a minute, then drain and cool.
  3. Toast pumpkin and sesame seeds in a pan until golden, then let them cool.
  4. In a serving bowl, combine salad leaves, chopped avocado, and beans.
  5. Add the cooled broccoli and seeds to the bowl, then pour over the dressing and toss well.
  6. Serve with steamed brown rice or soba noodles for a more substantial meal.
