Instructions
- Prepare the dressing by mixing all dressing ingredients in a bowl, adjusting salt to taste.
- Blanch the broccoli in boiling salted water for about a minute, then drain and cool.
- Toast pumpkin and sesame seeds in a pan until golden, then let them cool.
- In a serving bowl, combine salad leaves, chopped avocado, and beans.
- Add the cooled broccoli and seeds to the bowl, then pour over the dressing and toss well.
- Serve with steamed brown rice or soba noodles for a more substantial meal.
