Asian-Inspired Broccoli Salad

Ingredients

The salad

  • 1 large head broccoli
  • 1 medium carrot, grated
  • 1 medium granny smith apple, diced
  • 4 cups fresh spinach
  • ¼ cup sunflower seeds

The dressing

  • 4 tbsp olive oil
  • 3 tbsp orange juice
  • 1 tbsp tamari or soy sauce
  • 2 tsp maple syrup
  • 1 tbsp miso paste
  • 1 tbsp salt
  • ½ tsp black pepper

Instructions

  1. Wash and cut the broccoli into small pieces.
  2. Steam or blanch the broccoli until al dente, then set aside to cool completely.
  3. In a large bowl, combine the grated carrot, diced apple, spinach, sunflower seeds, and cooled broccoli.
  4. In a small bowl, whisk together olive oil, orange juice, tamari, maple syrup, miso, salt, and pepper, adjusting seasoning to taste.
  5. Dress the salad, mix well, and enjoy.
