Broccoli Apple Salad

The dressing

Instructions
- Boil water in a large pot and blanch the broccoli florets for 1 minute, then rinse with cool water.
- Julienne the broccoli stems and combine them with the blanched florets in a large bowl.
- Add sliced onion, toasted sunflower seeds, diced apple, and chopped parsley to the bowl.
- In a blender, combine the dressing ingredients and process until well mixed.
- Toss the dressing with the broccoli mixture and refrigerate for at least 30 minutes before serving.
