Broccoli Apple Salad

Ingredients

The salad

  • 1 pound broccoli with stems
  • ½ medium red onion
  • ¼ cup sunflower seeds
  • 1 medium apple
  • ¼ cup parsley

The dressing

  • 3 tablespoons Dijon mustard
  • 3 tablespoons maple syrup
  • ¼ cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

Instructions

  1. Boil water in a large pot and blanch the broccoli florets for 1 minute, then rinse with cool water.
  2. Julienne the broccoli stems and combine them with the blanched florets in a large bowl.
  3. Add sliced onion, toasted sunflower seeds, diced apple, and chopped parsley to the bowl.
  4. In a blender, combine the dressing ingredients and process until well mixed.
  5. Toss the dressing with the broccoli mixture and refrigerate for at least 30 minutes before serving.
