Broccoli Salad

Ingredients

The salad

  • ½ cup chopped red apple
  • 1 teaspoon lemon juice
  • 8 slices center cut bacon, cooked crisp and chopped
  • 3 cups chopped broccoli florets
  • ¾ cup sliced red grapes
  • ½ cup shredded or matchstick carrots
  • 1 medium scallion, chopped
  • cup sunflower seeds

The dressing

  • ½ cup low fat mayonnaise
  • 2 tablespoons granulated sugar
  • 1 tablespoon apple cider vinegar

Instructions

  1. Combine chopped apples and lemon juice in a large mixing bowl, stirring to coat.
  2. Add bacon, broccoli, grapes, carrots, scallions, and sunflower seeds to the bowl and mix well.
  3. In a separate bowl, mix mayonnaise, sugar, and apple cider vinegar until combined.
  4. Pour the mayonnaise mixture over the salad ingredients and stir until everything is well coated.
  5. Chill in the refrigerator before serving, or serve at room temperature.
