Roasted Broccoli Salad with Almonds

Ingredients

Simple Sesame Dressing

  • 2 Tbsp neutral oil
  • 1 Tbsp rice vinegar
  • 4 tsp soy sauce
  • 1 tsp toasted sesame oil
  • 1 Tbsp brown sugar
  • 1 tsp grated fresh ginger
  • ½ Tbsp sesame seeds

Salad

  • 1 lb frozen broccoli florets
  • 1 Tbsp neutral oil
  • 1 pinch salt
  • cup sliced almonds
  • 1 cup crunchy chow mein noodles
  • 2 count green onions

Instructions

  1. Prepare the dressing by combining all dressing ingredients in a jar or bowl and mix well.
  2. Spread frozen broccoli on a baking sheet and preheat the oven to 400ºF.
  3. Once thawed, cut large broccoli florets into smaller pieces, drizzle with oil and salt, and toss to coat.
  4. Roast the broccoli for 30 minutes, stirring after 20 minutes, adding almonds after 25 minutes.
  5. Allow the broccoli and almonds to cool for 5-10 minutes.
  6. Add chow mein noodles and sliced green onions to the cooled broccoli and stir to combine.
  7. Drizzle the dressing over the salad and stir until everything is well coated.
  8. Serve immediately.
