Ingredients

The salad

  • 1 pound broccoli florets
  • ½ cup raw sunflower seeds or slivered almonds
  • ½ cup finely chopped red onion
  • ½ cup grated sharp cheddar cheese (optional)
  • cup dried cranberries or dried tart cherries, chopped

Honey mustard dressing

  • cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 medium clove garlic, pressed or minced
  • ¼ teaspoon fine sea salt

Instructions

  1. Toast the sunflower seeds in a skillet over medium heat until golden, about 5 minutes, then transfer to a large bowl.
  2. Add the chopped broccoli, onion, cheese, and cranberries to the bowl.
  3. In a separate bowl, whisk together the dressing ingredients until well blended.
  4. Pour the dressing over the salad and stir to coat the broccoli.
  5. Let the salad marinate for at least 20 minutes before serving.
