Ingredients

The salad

  • 1 lb broccoli, chopped into small pieces
  • ½ cup red onion, diced
  • cup roasted sunflower seeds
  • cup dried cherries, chopped

The dressing

  • ½ cup plain 2% or full fat Greek yogurt
  • 2 tbsp extra virgin olive oil
  • 1 ½ tbsp white vinegar
  • 1 tbsp honey
  • ½ tsp fine sea salt
  • to taste freshly ground black pepper

Instructions

  1. Chop the broccoli and red onion, then place them in a large mixing bowl with the sunflower seeds and dried cherries.
  2. In a separate small bowl, whisk together the Greek yogurt, olive oil, vinegar, honey, salt, and pepper until smooth.
  3. Pour the dressing over the broccoli mixture and toss well to coat. Taste and adjust the seasoning if necessary.
