Ingredients

Yogurt Sauce

  • 1 – 1 ⅓ cups plain yogurt
  • 2 Tablespoons extra virgin olive oil
  • 2 Tablespoons honey or agave
  • 1 Tablespoon balsamic vinegar
  • 2 teaspoons lemon juice
  • ¾ – 1 teaspoon kosher salt
  • ¼ – ½ teaspoon black pepper

Salad

  • 1 pound broccoli florets
  • ½ cup dried berries or 1 cup fresh blueberries
  • cup roasted nuts or seeds
  • ½ cup sliced/diced red onion
  • 1 cup baby spinach leaves (optional)

Instructions

  1. Whisk together the yogurt, olive oil, honey, balsamic vinegar, lemon juice, salt, and pepper in a small bowl to make the dressing.
  2. In a large bowl, combine the broccoli, red onion, blueberries, and nuts/seeds.
  3. Pour the yogurt dressing over the salad and mix gently until combined.
  4. Add the spinach (if using) and toss again to coat.
  5. Season to taste, then refrigerate for 45 minutes to an hour before serving.
