Ingredients

Honey Yogurt Dressing

  • ½ cup plain Greek yogurt (2%)
  • ¼ cup light mayonnaise
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • ¼ tsp salt
  • to taste freshly cracked pepper

Salad

  • 4 cups broccoli florets (about 2 crowns)
  • ¼ red onion
  • 1 carrot
  • cup dried cranberries
  • ¼ cup raw sunflower seeds

Instructions

  1. 1. Prepare the dressing by mixing yogurt, mayonnaise, vinegar, honey, salt, and pepper.
  2. 2. Cut broccoli into small florets and rinse them in cool water.
  3. 3. Peel and shred the carrot, and slice the red onion thinly.
  4. 4. In a large bowl, combine the broccoli, carrot, onion, cranberries, and sunflower seeds.
  5. 5. Pour the dressing over the salad and mix until everything is coated.
  6. 6. Let the salad marinate for 10-15 minutes before serving.
