Ingredients

The salad

  • 2 medium heads broccoli, chopped into small pieces
  • ¼ teaspoon salt
  • ¼ medium red onion, finely diced
  • 1 large red pepper, diced
  • ¼ cup dried cranberries
  • ¼ cup sunflower seeds
  • cup crumbled feta cheese

The dressing

  • ½ tablespoon lemon juice
  • 1 teaspoon balsamic vinegar
  • to taste pepper
  • 3 tablespoons olive oil, divided

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium/high heat.
  2. Add broccoli and season with ¼ teaspoon salt, cooking for about 3 minutes.
  3. Add diced red onion and cook for an additional 2 minutes.
  4. Remove from heat and transfer broccoli and onion to a large bowl.
  5. Mix in red pepper, dried cranberries, sunflower seeds, and feta cheese.
  6. Whisk together lemon juice, remaining olive oil, and balsamic vinegar, then drizzle over the salad.
  7. Mix well, add more salt and pepper to taste, and serve immediately or refrigerate for later.
