Instructions
- Soak cashews in hot water for 30 minutes, then drain.
- Prepare kale chips or sautéed kale if using, and set aside.
- Spiralize the sweet potatoes and set aside.
- Blend soaked cashews with garlic, nutritional yeast, salt, arrowroot starch, and almond or rice milk until smooth.
- Heat the sauce in a pan over medium-low heat until it bubbles, then reduce to a low simmer.
- Steam the sweet potato noodles for 3-5 minutes until tender.
- Combine the sweet potato noodles with the sauce and toss gently.
- Serve with optional toppings like parsley, kale, chickpeas, or vegan parmesan.
