Garlicky Alfredo Sweet Potato Noodles

Ingredients

The sauce

  • 1 cup raw cashews
  • 3 cloves garlic
  • 4-5 Tbsp nutritional yeast
  • ½ tsp sea salt
  • 2 tsp arrowroot starch
  • 1½-2 cups unsweetened plain almond or rice milk
  • 1 pinch red pepper flake (optional)

The noodles

  • 3 medium sweet potatoes

For serving (optional)

  • to taste fresh chopped parsley
  • to taste sautéed kale or kale chips
  • to taste crispy chickpeas
  • to taste vegan parmesan cheese
  • to taste red pepper flake

Instructions

  1. Soak cashews in hot water for 30 minutes, then drain.
  2. Prepare kale chips or sautéed kale if using, and set aside.
  3. Spiralize the sweet potatoes and set aside.
  4. Blend soaked cashews with garlic, nutritional yeast, salt, arrowroot starch, and almond or rice milk until smooth.
  5. Heat the sauce in a pan over medium-low heat until it bubbles, then reduce to a low simmer.
  6. Steam the sweet potato noodles for 3-5 minutes until tender.
  7. Combine the sweet potato noodles with the sauce and toss gently.
  8. Serve with optional toppings like parsley, kale, chickpeas, or vegan parmesan.
